I don't necessarily think Angel's existence would have altered what happened next. He wasn't present in S4-S7. And in S1-3, he really didn't alter her world that much. That said, if she had staked him - we wouldn't have a series, because I'm willing to bet it would have ended with S1. The Angel/Buffy relationship brought in viewers, as did the Spike/Buffy pairing.
