1. Two episodes in on the first season of Orange is the New Black - and I'm already loving it. Possibly the best female centric dramedy that I've seen in ages. Compelling with lots of fascinating characters and situations. Only problem - is you have to wait a while for each season to be available on DVD, which frankly makes no sense considering Netflix created it. Seriously, Netflix? Seriously?
My favorite characters are a draw right now between "RED", the Russian cook brilliantly portrayed by Kate Mulgrew, and Suzie, the wacky lesbian.
2. Tried two new recipes from The Practical Paleo.
* The first one, apple streusal egg muffins is actually a lot better than the almond coconut bread, and worked. Of course I changed the recipe a bit. Or tweaked it. I've discovered this is necessary with recipe books. They just don't work as written for some reason. Also they are always set up for a family of five for some reason or other.
PREP TIME: 15 minutes
COOKING TIME: 40 minutes
YIELD: 12 muffins

ingredients:
3 large green apples, chopped into 1/2 inch pieces (approximately 2 cups) – peeled if you like [Substituted two chopped overripe bananas]
3 tablespoons warm water
2 teaspoons cinnamon, divided
1 1/2 tablespoons butter or coconut oil (to make it dairy-free), melted [used coconut oil]
9 eggs [5 eggs - in an attempt to half the recipe]
3 tablespoons coconut milk [two tablespoons]
1 1/2 tablespoons coconut flour [2 teaspoons]
1/4 teaspoon baking soda [a pinch of baking soda - otherwise it tastes like baking soda].
preparation:
Preheat oven to 350F.
In a medium skillet, sautée the apples, water, 1 1/2 teaspoons of the cinnamon, and butter or coconut oil until theapples bananas are the consistency of chunky applesauce or apple banana pie filling. [I did the same thing with the bananas] Allow the mixture to cool before combining with the egg mixture. [Put the pan in the freezer to make it cool faster.]
In a medium-sized mixing bowl, whisk the eggs, butter, coconut milk, coconut flour, 1/2 teaspoon of cinnamon, baking soda, and salt until well combined. Add the cooled apples, reserving 1/4 cup for a garnish. [added bananas, then cooked a few apples for garnish, also pecans, because I'd run out of walnuts.]
Spoon egg andapple banana mixture into parchment cup lined muffin tins—1/4 cup each. Gently spoon about one teaspoon of the remaining apple mixture onto the top of each muffin.
Bake for 40 minutes.
change it up:
Substitute lightly cooked pears or bananas instead of apples.
Add 1/4 cup of chopped nuts or coconut for texture and healthy fats.
side note:
For more sweetness, add a couple of chopped, dried medjool dates to the apples as they cook.
fodmap free?
Make this recipe with 2-4 chopped bananas instead of apples! [Fodmaps are foods that are difficult on joints and the digestive system - people with autoimmune disorders
and leaky gut tend to avoid.]
* The other one - was tea gelatin - apparently gelatin is great for cell growth in the gut? So all you do here is put tea bags in water, follow the directions on the gelatin package (use Knox plain gelatin) and put in the fridge.
We'll see if this works.
