Figured out how to make paelo or rather, pancakes that won't kill me:

2 large eggs
3 tablespoons full fat coconut milk
½ mashed ripe banana (about 2 tablespoons)
½ teaspoon apple cider vinegar
½ teaspoon vanilla extract
1½ tablespoons of Bob’s Red Mill organic coconut flour
½ teaspoon cinnamon
¼ teaspoon baking soda
1 small pinch of salt
ghee or coconut oil (for frying)
Here’s how I made the pancakes:
I whisked the eggs, coconut milk, mashed banana, apple cider vinegar, and vanilla extract together until well combined.Then, in a separate bowl, I mixed together the rest of the ingredients (except for the ghee)……before whisking together the dry and wet ingredients just before cooking. I heated a tablespoon of ghee (clarified butter) over medium heat in a small cast iron skillet and added a tablespoon of batter to the pan. As soon as bubbles formed on the surface (about 1½ minutes)…I flipped the flapjack over and let it cook for another 30 seconds or so on the other side. Repeat until done with the batter and enjoy!

1. Roasted Acorn Squash
1 Acorn Squash
2-3 Tablespoons pastured butter
Cinnamon, sprinkled
2 teaspoons honey or molasses (optional)
Instructions
Preheat the oven to 350.
Cut squash in two, lengthwise, and remove seeds.
Lay open side down on a cookie sheet lined with foil.
Bake for 30 minutes.
Add butter, cinnamon, and honey to each side of the squash.
Bake open side up for additional 30 minutes.
I'll probably do it without the honey/molasses.
2. Rock Cornish Game Hen
It's so easy. And the hen is tastier than turkey or chicken, and great for singles. It's sort of a hybrid. You just remove the bag in the cavity holding the gizzard, liver, etc, wash it, pat it dry, then put two-three cloves of garlic, parsley, sea salt and pepper in the cavity, tie the legs to the neck sealing it, tuck the points of the wings towards the back, have brest up, brush olive oil on top, season with thyme, rosemary, salt, and pepper and little lemon juice - roast covered for about 30 minutes. (My oven only has broil and bake settings, so baked at 375, for 30 minutes.)
While it's baking make the sauce - apple cider, lemon juice, rosemary, gizzard, heart, liver, arrowroot power instead of corn starch or flour, salt and pepper...simmer over low head. Take hen out, pour or baste sauce over hen, cook for an additional 20-30 minutes or until done (should run clear no pink). Take out. Pour a bit more of the sauce over the top.
Really tender and tasty.
3. Green Beans and Yellow Wax beans - crisp with dill
4. Pumpkin Chocolate Chip Cookies for desert, maybe. Or pumpkin bread.
ngredients
3/4 cup of pumpkin puree (you can sub sweet potato or squash too, maybe even banana)
1/2 cup of coconut flour
1/2 cup of coconut oil, melted
6 eggs
2 tsp vanilla extract
1/4 cup honey
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1/2 tsp of gluten free baking powder
1 cup Enjoy Life chocolate chips
Instructions
Preheat oven to 375 Degrees Fahrenheit
Combine your pumpkin, coconut oil, eggs, vanilla and honey in a stand mixer or large mixing bowl and mix well
Sift the coconut flour, cinnamon, nutmeg, allspice, and baking powder together
Add the sifted flour and spices to the pumpkin puree and mix well until all clumps are gone
Fold in your chocolate chips and ensure an even distribution of all the ingredients
Scoop out your cookies in a large tablespoon onto a parchment lined baking sheet
Bake for 10-12 minutes until the bottoms are done
These cookies are supposed to be cake like so they won't cook like normal cookies
Serve warm or store in an airtight container for 3 days
Notes
If you can not buy gluten free baking powder, you can make it yourself. You just combine 1 teaspoon baking soda to 2 teaspoons cream of tartar. You have to use it right away as it won't store without the cornstarch. OR use Davis Baking Powder - it's gluten free.

This was amazing, I added diced pecans. It tastes like pumpkin pie except as a cookie with chocolate and no crust.
I may or may not do a baked sweet potato with butter and cinnamon. Also possibly a spinach salad with daikon radish, pecans and red onions - lemon juice dressing.
I like food to be rather simple, without too much added.
