Figured out how to make paelo or rather, pancakes that won't kill me:

2. Rock Cornish Game Hen
It's so easy. And the hen is tastier than turkey or chicken, and great for singles. It's sort of a hybrid. You just remove the bag in the cavity holding the gizzard, liver, etc, wash it, pat it dry, then put two-three cloves of garlic, parsley, sea salt and pepper in the cavity, tie the legs to the neck sealing it, tuck the points of the wings towards the back, have brest up, brush olive oil on top, season with thyme, rosemary, salt, and pepper and little lemon juice - roast covered for about 30 minutes. (My oven only has broil and bake settings, so baked at 375, for 30 minutes.)
While it's baking make the sauce - apple cider, lemon juice, rosemary, gizzard, heart, liver, arrowroot power instead of corn starch or flour, salt and pepper...simmer over low head. Take hen out, pour or baste sauce over hen, cook for an additional 20-30 minutes or until done (should run clear no pink). Take out. Pour a bit more of the sauce over the top.
Really tender and tasty.
3. Green Beans and Yellow Wax beans - crisp with dill
4. Pumpkin Chocolate Chip Cookies for desert, maybe. Or pumpkin bread.

I may or may not do a baked sweet potato with butter and cinnamon. Also possibly a spinach salad with daikon radish, pecans and red onions - lemon juice dressing.
I like food to be rather simple, without too much added.
